Effortless Rice Cooker Claypot Chicken & Mushroom Rice Recipe 电饭锅砂煲蘑菇鸡饭 Singapore Malaysia Hong Kong

INGREDIENTS

For the Marinated Chicken:
260g (9.17 oz) boneless chicken meat, cut into bite-sized pieces
1 tbsp oyster sauce
½ tbsp light soy sauce
½ tsp sugar
A few dashes of white pepper

For the Rice and Other Ingredients:
265g (9.35 oz) raw jasmine rice, washed and drained (approx. 2 rice cups)
300ml (10.14 fl oz) water or chicken stock (approx. 2 rice cups)
1 Chinese sausage, casing removed and sliced
3 Chinese dried mushrooms, rehydrated and sliced
100g (3.53 oz) fresh button mushrooms, washed and quartered

For the Sauce:
2 tbsp cooking oil
3 shallots, peeled and thinly sliced
40ml (1.35 fl oz) water
1 tbsp light soy sauce
2 tbsp premium dark soy sauce
½ tsp sugar
