????One of the best things about staying at our place,is having the space to create fresh, delicious meals to enjoy anywhere! This hearty, homemade sandwich is the perfect way to fuel up for a day of exploring. Made right in the cozy kitchen, packed with fresh ingredients like juicy chicken, roasted peppers, creamy cheese, and crisp greens—your perfect sandwich is just a few steps away.

???????? After prepping, take it with you on a laid-back picnic in one of the nearby scenic spots, soaking up the sun and enjoying the Florida breeze.

???????? The best part? No restaurant lines, just your own culinary creation with a side of adventure!

Picnic Pesto Chicken Sandwich
Serves 4

Prep Time: 10 minutes
Total TIme: 10 minutes

Ingredients
For the sandwich
1 focaccia loaf, cut horizontal
2 cooked and shredded chicken breast
1 6 oz. jar pesto
1 12 oz. jar roasted red peppers, drained and blotted dry with paper towel
1 8 oz. jar marinated artichoke hearts, drained
1 large ball fresh buffalo mozzarella, sliced
Couple handfuls, fresh arugula

For the picnic
Hummus
Vegetables
Hard boiled eggs
Fruit

Instructions
Toss the shredded chicken breast in ½ of the pesto and set aside. Divide the remaining pesto and spread on the top and bottom half of the cut focaccia. Lay the roasted red peppers on the bottom half of the focaccia, followed by the shredded chicken, marinated artichoke hearts, sliced buffalo mozzarella and finally, the arugula. Top with the top half of the focaccia, cut into 4 equal size sandwiches, wrap for your picnic, and enjoy!
